Your origonal plan sounds the best, you dont nessacerily need to be in the shoe isle though, any secluded part of the shop will be fine. Another method you could use is to open something that comes in a box, and full the box with said items and then pay for the boxed item, this works quite well for stealing large numbers of expensive electronics items.
If you have a problem of getting nervouse try drinking a little before hand to loosen up (but not to much!!)
You could have nothing more useful than a good group of relayable mates that wond freak on you of somthing goes wrong. You may also want to work out a warning system befoerhand (whistle, cough etc.)
