I worked at an electronics store and they would HOLD YOU UP until they were sure even if was going off when nobody was going through, purse-search and all. I didn't care because theft doesn't bother me, but it does put a bit of a dent in your plan.

That's still the way it works for apprehensions. They can/will still harass you while inside the store if they catch you, but no detaining or arresting until you've left.
