Yes and no.
Distillation is the first step, and I suppose there is nothing to stop you from drinking your work as soon as you have distilled it. But if you want decent brandy, you'll need to let it age a while after it has been distilled.
Spirits like brandy are aged in specifically designed barrels (normally made of oak), and are more often than not left to age for years or decades before it is bottled and consumed.
